Game day turkey chili

 

Ingredients

  • 2 lbs. of Ground Turkey

  • 3-4 Italian Sweet Sausage Links

  • 28 oz. can of Crushed Tomatoes

  • 2 cups of Chicken Broth

  • 2 tbsp. of Tomato Paste

  • 15 oz can of Chili Beans (optional)

  • 3 Bell Peppers (I like orange & yellow)

  • 1 Sweet Potatoes (about 1 cup)

  • 4 Large Zucchini (2 green, 2 yellow)

  • 1 Large Yellow Onions (about 2 cups)

  • 2 tbsp. of minced garlic

  • 2 tbsp. of Chili Powder

  • 1 tsp. of Paprika

  • 1 tsp. Dried Oregano

  • 1 tsp. of Cumin

  • 1 tsp. of Salt

  • 1 tsp. Black pepper

  • 2 tbsp. of Olive Oil (halved)

Directions

  1. In a dutch oven (or stock pot) heat 1 tbsp. olive oil over medium heat. Add the onions & garlic. Cook until onions start to brown. Add sweet potato, bell peppers, zucchini, crushed tomatoes, chicken broth, & tomato paste. Cover with lid and turn heat to low.

  2. In a large skillet heat 1 tbsp. olive oil over medium heat. Add the ground turkey. Once meat has browned, drain liquid, & add in all dry spices.

  3. Transfer turkey meat to the dutch oven.

  4. Remove casing from sausage. Cook sausage crumbles in the skillet. Once browned transfer to the dutch oven. Bring the chili to a boil, then reduce heat and simmer for 1 hour covered.

  5. Garnish ideas: Cheese, sour cream, jalapeños, cilantro, avocado, green onions, red pepper flakes, and/or crumbled corn chips. My favorite option is pouring the chili over 1/2 cup of jasmine rice.

**We add our red pepper flakes in our individual bowls because Little Donny doesn’t like his too spicy. If you like spice, add the red pepper flakes in step 2!
