Chicken Fajita Strips

Medium/High Heat for 10-15 Minutes

  • 3 Chicken Breast

  • 2 tbsp. of Olive Oil

  • Juice of 1 Lime

  • 1 tsp. Chili Powder

  • 1/2 tsp. Paprika

  • 1/ tsp. Cayenne Pepper

  • 1/2 tsp. Onion Powder

  • 1/2 tsp. Black Pepper

  • 1/2 tsp. Cumin

Directions

  1. Cut chicken lengthwise into chicken tender strips. 

  2. Place chicken in a bowl and coat the chicken with 1 tbsp. olive oil and lime juice.

  3. Add all spices and mix thoroughly.

  4. Preheat remaining olive oil over medium/high heat.

  5. Add chicken to pan and cook for approximately 10-15 minutes.


Pepper & Onions

 

MEDIUM/HIGH HEAT FOR 10-15 MINUTES

  • 4 Peppers, thinly sliced

  • 1 Yellow Onion, thinly sliced

  • 1 tbsp. Olive Oil

  • 1 tsp. Salt

Directions

  1. Cut peppers & onions.

  2. Heat oil in pan.

  3. Add peppers and onions to pan.

  4. Cook for approximately 10-15 minutes

NOTE: I cook my peppers & onions in a separate pan. This makes it easier to pack up my meals.


Jasmine Rice with Dill

 

20 Minutes

  • 1 cup of Jasmine Rice

  • 2 cups of Water

  • 1 tbsp Olive Oil

  • 1 tsp Sea Salt

  • 1/2 tsp Dill

Directions

  1. Bring water to a boil.

  2. Add oil and salt.

  3. Stir in rice and cover with lid.

  4. Reduce heat to low and simmer for 15 minutes.

  5. Remove lid, stir rice, and sprinkle in 1/2 tsp of dill.

  6. Remove from heat and let stand (covered) for 5 minutes.
